Never in human history has sugar been available without limit. Today, every meal, every snack and every bite between meals delivers a dose of glucose the body has no time to use. The result is a body constantly forced to burn sugar, deprived of the metabolic calm that existed when carbohydrates were scarce and energy came mainly from fats.

Returning to the ketogenic diet is not following a “fad”: it is reconnecting with an ancient biological mechanism, one that allowed the body to function efficiently for long periods without exhaustion. When carbohydrates are reduced and fats become the primary fuel again, the body reignites an inner fire that is slower, more stable and far more respectful of its physiology.

How the Ketogenic Diet Actually Works

The ketogenic diet rests on a simple idea: letting the body recover its natural mode of functioning. When carbohydrates become scarce, metabolism stops chasing glucose and turns to a more stable fuel: fats. This shift is not artificial; it is the original biological state of the human being. For millennia, periods without food were common, sugar sources were rare and seasonal, and energy came from stored fat or from fats present in food. The liver then turns these fats into ketones, a clean, steady fuel that nourishes the body without sharp swings.
When this process reactivates, many things change at once: more inner calm, lasting satiety, steadier energy and less dependence on meals. The body stops craving sugar, because it no longer perceives an energy shortage. It recovers an autonomy it had lost under modern eating and the permanent abundance of carbohydrates.

Removing the Foods That Sustain Metabolic Chaos

Adopting a ketogenic diet means removing the carbohydrate sources that keep the body in an unbalanced glycaemic cycle. That includes bread, pasta, rice, breakfast cereals, sweet products and everything that contains starch. Root vegetables must also be limited, because they are naturally rich in carbohydrates. Potatoes, sweet potatoes, carrots in large amounts, beetroot, parsnips or Jerusalem artichokes raise blood sugar too easily for true ketosis to become established. Legumes, despite their “healthy” image, remain too rich in carbohydrates for this transition.
Most fruits are also too sweet. Bananas, grapes, mangoes, pineapples or dates leave no room for ketosis. The only fruits that are truly compatible are small berries such as raspberries, blackberries, blueberries or strawberries, eaten in moderation. This approach can seem radical, but it answers a biological reality: as long as glucose circulates in quantity, the body cannot switch to burning fat.

Making Fat a Reliable Fuel

When carbohydrates are reduced, fat must be present in sufficient amounts to help the body move through this transition without discomfort. This is often where mistakes appear, because many people reduce carbohydrates without increasing their fat intake enough, which leaves the body in an energy deficit. The ketogenic diet does not rest on deprivation, but on a change in the body’s primary fuel source. Eggs, avocados, fatty meats, butter, ghee, olive oil or coconut oil become natural allies. These are dense, nourishing foods that stabilise blood sugar and calm hunger.
When the body understands that it is no longer in danger and that it receives enough fat, it begins to produce ketones efficiently. Energy is no longer dependent on a constant external supply, and a sense of grounding, clarity and continuity returns.

Adaptation: A Normal and Temporary Phase

In the first days, the body goes through a period of rebalancing. The drop in glucose comes with a release of water and a loss of sodium, which explains the symptoms of what is called “keto flu”. Fatigue, headaches or a drop in energy can appear if electrolytes are not properly replaced. This is neither a danger signal nor a weakness of the ketogenic approach: it is a normal physiological adjustment. An adequate intake of salt, potassium and magnesium is usually enough to ease this stage.
As the days pass, the body learns to recognise fats as its main fuel. The mind becomes clearer, hunger decreases and you discover an emotional stability that glucose did not allow. The transition is not linear, but it progresses naturally through successive stages, each step bringing a better understanding of your own body.

A Terrain That Changes in Depth

Adopting the ketogenic diet, even in its simplest form, deeply changes the terrain. Inflammation settles down, blood-sugar swings stop, mood eases and concentration returns. Sleep improves, digestion stabilises and the body starts repairing what had been set aside. This reconstruction phase can bring a temporary rise in appetite: the body uses the sudden arrival of nutrients to restore what had been missing for a long time.
By recovering a slow, stable fuel, the hormonal system adapts. Cycles regularise, phases of fatigue fade and the relationship with food becomes far more serene. The ketogenic diet is not a method of deprivation: it is a way of reteaching the body to use what belongs to it.

Choosing Fats That Truly Support Health

The ketogenic diet rests on a simple idea: when carbohydrates are reduced, fats become the dominant energy source. Their quality then becomes central. A ketogenic diet based on fragile, industrial or already oxidised oils can cause more damage than the carbohydrate diet it replaces. Conversely, natural fats that are stable and suited to human physiology rebuild a clear, stable and lasting terrain.

Quality animal fats form the safest foundation. They are naturally stable, resistant to oxidation and support the nervous, immune and hormonal systems. Their value depends directly on the animal’s diet: beef, sheep or lamb fat from grass-fed animals has a balanced lipid profile and excellent thermal stability, which makes it a stable and sustained source of energy. Poultry fats can also be valuable when they come from animals raised outdoors and fed a natural diet, because a diet dominated by grains or soy makes the fat unstable and inflammatory.

Lard is a special case. It is truly beneficial only when it comes from pigs raised outdoors and fed naturally. A pig that is even “organic” but fattened on grains produces an unstable fat, rich in omega-6, far from traditional lard. That is why genuine quality lard is hard to find today.

Ghee, especially when homemade or made from butter from grass-fed animals, remains a stable, digestible fat perfectly suited to cooking. Butter from grass-fed animals can complement this base when cooking stays gentle.

Some virgin plant oils can also be used alongside these animal fats. Extra-virgin olive oil is ideal for dressings and moderate cooking. Virgin avocado oil handles medium heat and stays relatively stable when it is fresh and of good quality. Virgin macadamia oil has good thermal resistance and can be used in gentle to medium cooking depending on its quality.

The freshness of plant oils is decisive: light, heat, transport and prolonged storage oxidise them quickly. Even when “cold-pressed”, they can be damaged before they reach the buyer. They should be purchased as fresh as possible, stored away from light and heat, and used promptly.

By contrast, fragile industrial oils (sunflower, maize, soy, peanut, grapeseed) are especially rich in omega-6 and oxidise very fast. Rapeseed/canola oil, even though it contains little omega-6, remains extremely fragile: its omega-3 (ALA) oxidises quickly during production, transport and storage. In every case, these oils become unstable, irritating and inflammatory, especially as soon as they are heated. They have no place in a healthy ketogenic diet.

The quality of fats shapes the entire ketogenic experience: stable fats nourish mental clarity, hormonal balance and metabolic stability. Oxidised fats strain the liver, disturb the terrain and compromise adaptation. Choosing fats is therefore not a detail: it determines the depth and quality of the transformation.
